Recipe : Famous Betawi Gado - Gado

GADO - GADO


           Gado - Gado is traditional food from Betawi, Jakarta. Gado- Gado is Indonesian local food Salad with peanuts saute on the top. Gado - Gado most serve with adding topping such as egg, Tofu, Tempe amd Crackers. Lets make our own Gado- Gado!
Before make Gado - Gado all thing you need prepare are :
           Materials :
    •  350 grams of boiled potatoes,then fried and cut.
    •  350 g tempe
    •  350 g white tofu
    •  7 pieces of lettuce
    •  Thinly sliced 2 pieces of cucumbers
    •  100 g  sproutsbean
    •  200 grams of boiled cabbage, then sliced
    •  Oil 
          Marinade Ingredients (mix tempe and tofu well):
    •  3 cloves garlic
    •  mashed 1 teaspoon coriander powder 
    •  1 teaspoon salt
    •  200 ml water 
          Sauce ingredients:
    •  200 g of  fried fried and smash
    •  3 pieces of lime leaves
    •  2 tablespoons of sweet soy 
    •  1 teaspoon salt 
    •  3 teaspoons brown sugar 
    •  600 ml coconut milk 
    •  1/4 teaspoon tamarind water and 2 tablespoons water
    •  2 tablespoons of oil for sauteing 
           The spices Subtle:
    •  5 big red chilies
    •  3 pieces of curly red pepper 
    •  5 cm of kaempferia galanga  
    •  4 garlic cloves
    •  1/2teaspoon shrimp paste fried 
            Garnish:
    •  3 tablespoons of fried shallots for sprinkling
    •  100 g crackers crackers
    •  100 g fried starch
    •  2 tomatoes, sliced 
    •  4 hard-boiled eggs, cut into wedges

                                                         How to cook :                                                       

  1.  Soak Tempe and Tofu in the marinade ingredients. Fry in heated oil above medium heat until  cooked through.Set aside. 
  2.  Sauce: Saute seasoning  and lime leaves until fragrant.Add peanuts and sweet soy sauce . Mix  well. Add the coconut milk, salt, and  sugar.
  3.  Cook while stir until boil. Add tamarind water.Mix well. 
  4.  Plate thee pieces of potatoes, tofu, tempeh, lettuce, cucumber, sprouts, and cauliflower on a plate.Pour the sauce. Sow fried shallots and ready to serve.
