Recipe : Famous Sangu Tutug Oncom ( Sundanese Dish )

   
    In Sundanese dialect, sangu means rice, tutug means to pound and oncom refers to fermented soybean waste. Put together, the name sangu tutug oncom refers to a rice dish made from a mixture steamed white rice and fried/ roasted oncom on a wooden mortar.
    Althought modest, sangu tutug oncom populary known as STO or Nasi TO in the southern part of West Java, is one of impressive creation f fragnant, spice and savory rice. With sides dishes, fried  fish/chicken, peanut rempeyek (fritters), fried tempe and tofu, salted fish,cucumber slices and sambal. Now lets make your own Sangu Tutug Oncom.

Main Ingredients :

  1. 1 bowl warm steamed rice
  2. 100 gr oncom / fermented soybean waste (fried or roasted)
  3. 3 tbsp cooking oil
Spices :
  1. 1 Garlic cloves
  2. 1 little finger sized piece sand ginger
  3. 5 birds eye chilies
  4. 1/2 tsp salt
How To Make :
  1. In a food processor or using mortal and pestle grind all spices to a paste. Crush the fried or roasted oncom, then mix well with the spices pasta. Heat a little cooking oil in a pan, sautee the spice mixture.
  2. Blend the sautee spices with warm steamed rice.
  3. Garnish with fried shallots. Serve with condiments such as fried chicken/ fish, fried tempe and tofu, cucumber slices , salted fish and sambal.
