This is the ultimate coffee cake recipe. It’s so tender and fluffy it almost melts in your mouth. The brown sugar topping melts into the cake while baking, giving it an amazing taste while making it even more moist. Pure decadence. For the cake:
- 3 cups all purpose flour ( I sub one cup for whole wheat)
- 1 cup granulated sugar
- ¾ tsp salt
- 1½ tsp baking soda
- 1½ tsp baking powder
- 1½ tsp cinnamon
- ⅜ cup orange juice
- 1½ eggs
- 1½ cups milk
- ¾ cup vegetable oil
For the brown sugar topping:
- 1 cup brown sugar
- ½ cup butter
- 1 cup walnuts or pecans (optional)
For the glaze:
- 1⅛ cups powdered sugar
- 1½ tablespoons milk
- ¾ tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together flour, sugar, salt, baking soda, baking powder, and cinnamon.
- In a medium bowl, combine orange juice, eggs, milk, and oil.
- Add the wet ingredients to the dry and stir/fold just until combined. Don't over mix.
