Recipe : Famous Bihun Kari ( Curry Rice Vermicelli)


    The rice Vermicelli used for the curry is thick, cooked al dente to fit local taste. As for the meat, expect beef brisket full of tender and savory collagen fibers. But not only beef, there also another option like duck, chicken or shrimp. This Medan signature dish popular for breakfast meal, but it suitable for any time of day. Lets make your own  Curry Rice Vermicelli.


Main Ingredients :

  1. 1 free- range chicken ( cut into 8 pieces).
  2. 4 potatoes ( cut into 4 pieces).
  3. 1 onion ( sliced).
  4. 1 thumb-sized piece ginger ( sliced).
  5. 500 ml milk.
  6. 500 ml light coconut milk.
  7. 1 handful coriander ( keep stems and roots).
  8. 1 tablespoon of lime juice.
  9. 10 cm cinnamon.
Spices :
  1. 3 garlic cloves.
  2. 3 shallots.
  3. 1 teaspoon white pepper.
  4. 2 tablespoon curry powder.
How To Make :
  1. Clean chicken pieces, rub with salt, pepper and lime juice.
  2. Using mortar and pestle, grind garlic,shallots, pepper and salt. Heat a little oil in a wok and sautee the paste. Add the onion. 
  3. Toss in curry powder, cinnamon and chicken. Keep cooking.
  4. Pour in the coconut milk, milk and coriander leaves. Continue cooking over low heat until the chicken and potatoes are cooked through and the curry thickens.
  5. Serve with boiled rice vermicelli or steamed rice. Garnish with fried shallots.
