Recipe : Famous Udang Kipas Balado Petai ( Slippers Lobster Petai Balado)


     Udang Kipas Balado Petai or translated as Petai Slippers Lobster cooked in chili paste (Balado) is one of spicy food from Padang, West Sumatra. You can find this dish at Padang, this dish has the unforgettable flavor which is mixed from the fresh sweat and tender from the Slippers Lobster and the Balado. The cooking of this dish quite straightforward, so Lets make your own Udang Kipas Petai Balado now!


Main Ingredients :
  1. 4 Udang Kipas ( Slippers Lobster).
  2. 2 cluster of stink beans.
Spice Paste :
  1. 4 shallots.
  2. 2 garlic cloves.
  3. 6 red chilies.
  4. 5 tablespoon vinegar ( can also use lime juice).
  5. Tamarind juice.
  6. Salt to taste.
How to Make :
  1. Clean the slipper lobsters. Drizzle with tamarind juice and salt.
  2. Heat il in frying pan. Deep fry the slipper lobsters over high temperature until cooked through.
  3. In a separate wok, fry shallots, garlic red chilies and stink beans. Remove and drain.
  4. Using mortar and pestle, coarsely grind the fried spices. Add vinegar. Blend with the fried slipper lobsters.
  5. Place on serving plate.
