Recipe : Famous Local Binte Biluhuta
BINTE BILUHUTA
Binte Biluhuta literally means poured corn, an apt description of how this soupy dish made. The local also call it milu siram ( milu and binte both mean corn in local dialect). It's not the usual kind of corn soup you will find in Indonesia; but rather, a congee full of carbohydrate, protein and vitamins.
Binte Biluhuta is similiar to Manado tinutuan in its use of corn, vegetable and protein. This Gorontalo congee, However also adds grated coconut and shrimp. The commonly used vegetabes are eggplant, tomato and lemon basil. This dish has an unforgettable experienceon taste. Now, lets make your own Binte Biluhuta!
Main Ingredients :
- 2 white corns ( kernels cut from the cobs, approximately 550 grams).
- 200 grams peeled prawns.
- 1 eggplant ( cut into smaller pieces).
- 75 grams grated coconut.
- 2 tomatoes.
- 5 stems lemon basil.
- 2 liters water.
Spices :
- 1 red chili ( choopped).
- 4 bird's eye chilies ( chopped).
- 6 shallots ( chopped).
- 1 tablespoon calamansi or lime juice
- Salt to taste
How To Make :
- Fill water in a pot and bring to a boil. Add the corns and limestone paste and bring the water back to a boil on high heat, until the corns are cooked through. Rinse off the corn with clean water. Discard the water.
- Fill the pot with two liters of clean water and bring to the boil. Add the corn and cook until soft.
- Add eggplant, prawns, grated coconut, chilies, shallots and lemon basil. When the dish is almost cooked through, add calamansi or lime juice.
- Transfer to serving bowl.
