LAWA JANTUNG PISANG
Lawa Jantung Pisang is made from raw, or something blanched, banana blossom mixed with spiced grated coconut and added with raw ikan Mairo ( family of Anchovy Whitebaits). To finish off, calamansi juice is added for a tart, refreshing flavour.
This South sulawesi creation most resembles Balinese lawar in looks and ingredients. Its also quiet similiar to Javanese urap, but uses toasted instead of raw coconut. Similiar takes on Lawa Jantung Pisang with ikan mairo can also be find in Timor island by the name of "lawa ikan" or "kohu - kohu ikan puri" in Maluku.
Lawa Jantung pisang is best enjyed with ruji or dange, a thick cracker-looking piece of sago similiar to roasted sago in Maluku. Lawa Jantung Pisang is one of delicious simple food and now, Lets make your own Lawa Jantung Pisang!
Main Ingredients :
- 50 grams raw ikan mairo (family of Anchovy Whitebaits).
- 50 grams banana blossom ( peel off and discard the outer layers).
- 4 tablespoon toasted grated coconut
Spices :
- 2 red chilies.
- 1 calamansi or lime/kaffir lime.
- Salt to taste.
How To Make :
- Using mortal and pestle, grind red chili with salt to a coarse paste. Mix it with toasted grated coconut.
- Thinly slice banana blossom, soak in salted water to remove its sap.
- Mix the banana blossom, raw fish and spiced toasted grated coconut.
- Squeeze calamansi (or lime/kaffir lime ) onto the dish.
- Lawa is usually served with ruji or dange (roasted sago).
