Recipe : Famous Balinese Srombotan
BALINESE SROMBOTAN
Balinese Srombotan is a signature dish from Bali. This vegetarian dish is a delightful mixture of pecel and urap, complimented by two types of sambals : the lighter, spicier peanut-based chili sauce (sambal koples) and spiced grated coconut.
The vegetables most commpnly used are water spinach, spinach, long beans, bean sprouts, amd winged beans. Sometimes the melange also includes bunga Turi (Sesbania grandiflora ), banana blossom and cabbage. All of them are steamed and poured over with the spicy sambal koples, and sprinkled on top with urap spices. Fried peanuts or soybeans are generally added for garnishing and contrasting texture. other garnises may include fried chicken intestines or fried pork rind.
Much like the assorted fruit salad known as rujak, srombotan makes a refreshingly light snack. However, it can also be served with rice or rice cakes. At any rate, this Balinese treat is healthy, rich in flavours and cheap. When it comes to vegetable dishes, Srombotan is very popular and sold by hawkers in markets or on sidewalks. Main Ingredients :
- 1 handful water spinach ( pick the leaves and cut the stems into 5 cm lengths).
- 1 handful spinach ( pick the leaves and cut the stems into 5 cm lengths).
- 100 grams beansprouts ( trim the roots).
- 10 winged beans ( cut diagonally 1 cm)
- 10 long beans ( cut into 5 cm parts).
- Optional : Banana blossom, Bunga Turi (Sesbania grandiflora ) and other vegetables.
Koples Chili Paste :
- 50 grams peanuts (fried).
- 5 bird's eye chilies.
- 1 kaffir lime (squeezed).
- Shrimp paste , salt to taste.
- 2 tablespoon coconut oil.
Urap Kelapa Mixtures :
- 1/2 coconut (not too riped, grated) .
- 3 red chilies.
- 3 bird's eye chilies.
- 5 shallots.
- 3 garlic cloves.
- Shrimp Paste, salt to taste.
- 1 thumb size - piece sand ginger (grated).
- 1/2 thumb size - piece sand galangal (grated).
How To Make :
- Blanche the vegetables.
- In a food processor or using mortal and pestle, grind the spices to make urap mixture until they become a smooth paste. Remove and mix with grated coconut.
- In a food processor or using mortal and pestle, grind the chili paste ingredients to a fine texture. Thin it out.
- Grind the ingredients for the chili paste. Add water and mix well.
- Prepare the vegetables on a plate or banana leaves. Pour the chili paste on the top then sprinkle with the urap mixture. Top it off with fried peanuts or soybeans.
- Ready to serve.
