Recipe : Famous Lamongan Chicken Soto

( LAMONGAN CHICKEN SOTO )
Soto Ayam Lamongan or translated as Lamongan chicken Soto is a signature dish from East Java. Soto Ayam Lamongan was so famous in Indonesia and easy to find at whole Indonesia. Soto Ayam Lamongan is presented in a light, transparent, savory stock made from free-range chicken. In the bowl you will find thin slices of fried chicken, cabbage and glass noodle. These are then topped with chopped spring onions, fried shallots and the savory koya powder ( ground shrimp crackers, fried garlic and dried shrimp). Condiments include chili paste, sweet soy sauce and lime. If you like, you can enjoy the Lamongan chicken Soto with rice. This comfort food is so easy to like and can be enjoyed at anytime of day. Main Ingredients :
- 1 free-range chicken
- 6 eggs (boiled)
- 1/4 cabbage ( thinly sliced)
- 4 lemongrass stalks
- 6 kaffir lime leaves
- 1 Indonesian bay leaf
- 200 grams noodle ( soaked in hot water until tender, drained)
- 2 springs onions (thinly sliced)
- Fried Shallots
- Koya Powder (To make Koya, pound 2 shrimp crackers and 2 tablespoon of fried garlic to a smooth and soft powder.)
- Lime
Spice Paste :
- 8 garlic cloves
- 5 shallots
- 5 candlenuts (toasted)
- 1 little finger - sized piece ginger (roasted)
- 1 little finger - sized piece turmeric (roasted)
- 2 teaspoon white pepper
How To Make :
- Place chicken in a pot. Fill the pot with three liters of cold water until it just cover the chicken. Add lemongrass, Indonesian bay leaves, kaffir lime leaves and little salt.
- After the chicken meat is tenderized, remove and drain. Deep fry the chicken in a large skillet.
- In a food processor or using mortal and pestle, grind the spicy to a smooth paste. Heat a little cooking oil in a pan then sautee the spice paste. Add the sauteed spice paste into the chicken brooth. Continue cooking over low heat.
- Place in a small serving bowl : glass noodle, cabbage, slices of fried chicken and one half of a hard boiled egg. Pour the brooth into a bowl. Garnish with chopped spring onions, fried shallots and koya powder.
- Koya powder is provides a contrasting texture for the soupy soto. It is best to sprinkle the koya powder just before serving. Give Limesufficiently.
- Lamongan Chicken Soto ready to served. Enjoy it with sambal / spicy paste if you like spicy or soy sauce.
